Trick Or CHEESE
Happy Wednesday all! Halloween is this Saturday and with everything going on right now, your little ones deserve a little something to brighten their day! This recipe is super easy, absolutely adorable and also fun! What kid doesn’t like macaroni and cheese? They can also show off their creative side by carving up their own bell pepper bowl!
WHAT YOU’LL NEED
-
Kosher salt
-
6 medium orange bell peppers
-
1 ½ cups of elbow macaroni
-
3 tablespoons butter or margarine
-
2 cups milk not skim
-
2 cups of sharp cheddar cheese
Bring a large pot to a boil and add salt generously. Prepare a separate bowl with ice water and set it to the side. Cut the tops of the peppers, save them for later and remove all the seeds and insides. Put the peppers in the boiling water and cook until just tender, 2 to 3 minutes. Next, put the warm peppers into the ice bath. Once they have cooled down, start carving your mini jack-o-lanterns!
Next, prepare your pot with water and sprinkle in some salt and when it begins to boil, add in your pasta. When it’s al dente, strain the pasta and set to the side. Remove all water from the pot where you cooked your pasta and add in your butter. Once the butter is melted, add in the milk and set to a medium-high heat until it begins to bubble. Next, add in the cheese and mix until it’s smooth and melted. Add the pasta back into the pot with the mixture and fold it all together. Once finished, set aside to cool. Remove the peppers from the ice bath and dry with a paper towel. Fill the peppers with the mac and cheese and cap them with the pepper tops!
I hope you love this easy recipe as much as I do! Let me know if you try it, I’d love to hear from you!
Wishing you all a happy and safe Halloween!
