Sugar & Spice Sweet Potatoes
Happy Hump Day! As soon as October comes around the only thing I crave is comfort food! The gloomy weather and the chilly days and nights just make me want to put something warm and cozy in my belly!
I adore sweet potatoes; I’m always trying to find new ways to make them. This recipe is super easy, fast and most importantly; DELICIOUS!
WHAT YOU’LL NEED

3 Medium sized sweet potatoes

1 Chili

1/4 Cup of honey

4 Tablespoons of unsalted butter

Preheat your oven to 425 degrees. Wash and peel the sweet potatoes, then cut into even cubes. Cut the chili to your liking; I like mine in slices because it looks nice when presenting! Prepare your baking sheet and line with tin foil for easy cleanup and prevent the potatoes from sticking. Next in a sauce pan, add the honey, butter and chili. Simmer over low heat. Once done, set aside, remove the chilis and set them aside as well. Pour half of the honey mixture over the sweet potatoes and roast them in the oven for about half an hour; remember to flip them around every 10-15 minutes to coat them fully in the honey and prevent them from burning. Once finished, remove from the oven. Put the chilis back in the left over honey mixture and pour remainder on the finished sweet potatoes then season with salt.
