St. Patty's Day Honeydew-Cucumber Mojito
Happy St. Patrick’s day my loves! Today I want to share with you all a super cute, festive and refreshingly delicious recipe! This “mojito” is essentially non-alcoholic (I’m not a huge drinker!) but if you want, you could add in whatever you want!
WHAT YOU’LL NEED

1/4 lime

2 sprigs of fresh mint

1 (1 1/2-inch-long) piece English cucumber, sliced crosswise into 6 pieces

2 teaspoons superfine sugar

1 cup crushed ice

3/4 cup fresh honeydew melon juice (from half of a melon)

Club soda

Cucumber skin "shamrock," for garnish
First, place the honeydew into a juicer and juice. Set aside. Next, add your sugar, a bit of the mint and the lime in a tumbler or highball glass and muddle. Next, add in your cucumber slices and put ice on top. Then, pour the honeydew juice over the ice and top with club soda. Stir. To make the garnish, cut a shamrock from a slice of cucumber skin using a shamrock cookie cutter. Enjoy!
