Hump Day Cocktail: Watermelon Mojito
I don’t know about you, but Wednesdays always make me crave a little taste of the weekend. Treat yourself to a little hump day cocktail hour right from your own kitchen!
WHAT YOU’LL NEED

30 large fresh mint leaves, coarsely torn by hand

3 to 4 thick slices fresh watermelon

12 ounces light rum, such as Bacardi

1/2 cup simple syrup

6 tablespoons freshly squeezed lime juice (3 limes)

Sprigs of mint and spears of watermelon, for serving
Use a mortar and pestle to mash the mint leaves. Prepare the watermelon and remove the seeds and rind. Add the fruit to a food processor or blender and purèe. Next, add the mint to a large pitcher with the watermelon purée, rum, simple syrup and lime juice. Stir and enjoy! I like to garnish mine with some left over fresh mint leaves and of course, I add in ice!
