4th of July BBQ: Chicken with Peach-Cucumber Salsa

It's the weekend and I know many of us will be celebrating the Fourth of July with barbeques, cookouts and parades. Some of us will be watching fireworks or even dancing at a parade ! Apart from the usual burgers and hotdogs, this is a treat the entire family will LOVE! I hope everyone has an amazing 4th. God bless America!
Ingredients:
1-1/2 cups chopped peeled fresh peaches (about 2 medium)
3/4 cup chopped cucumber
4 tablespoons peach preserves, divided
3 tablespoons finely chopped red onion
1 teaspoon minced fresh mint
3/4 teaspoon salt, divided
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon pepper
First, let's prepare the summer salsa! In a small bowl, combine your peaches, cucumbers, 2 tablespoons of the preserves, onions, mint and 1/4 salt. Set to the side.
To make the PERFECT juicy chicken, make sure you season! I like just simple salt and pepper for this recipe. Next, on a lightly oiled grill, grill your chicken and cover it over medium heat for 5 minutes. Turn your chicken after the 5 minutes are up and grill for another 7-9 minutes (your preference) or until a thermometer reads 165°, brushing tops occasionally with remaining preserves. Serve with salsa and enjoy!
